Pumpkin Swirl Biscotti Bars

Crust
3 cups finely ground Paradiso (or Decadence) Biscotti
1 cup brown sugar
1 cup rolled oats
1 stick soft butter
2 eggs
Pinch of salt

Mix crust ingredients on med-low until thoroughly mixed (1 minute). Spread into greased 9 x 13 baking pan. Bake at 350 for 15 minutes.


Filling
1 can pumpkin
2 eggs
2 cups finely ground Originali (or Cioccolati)
1 stick soft butter
1 teaspoon baking soda
1 teaspoon ginger
2 tablespoon cinnamon
½ teaspoon nutmeg
1/3 cup sour cream
1/3 cup sweetened condensed milk


Mix filling layer on med-low until thoroughly mixed (1-2 minutes). Evenly spread filling over the pre-baked crust.

Swirl top: mix 1/3 cup each of sweetened condensed milk, whipped cream cheese and plain yogurt for 30-60 seconds. Dollop on top and drag knife through for swirl decoration.

Bake, attentively at 350 for 50-60 minutes or until clean toothpick.
